CASA BIRTHDAY CAKE

We love this delicious birthday cake because it's healthy and can easily be adjusted so children with food allergies can enjoy it as well. It's the perfect birthday cake for the Montessori casa!
This simple recipe is almost impossible to mess up. A little more or a little less of the ingredients and it still tastes great. Substitute bananas for eggs to make egg free/vegan, gluten free oats and vanilla to make it gluten free or make it refined sugar free by using honey or rice syrup instead of white sugar. Just be sure to eliminate the oil ONLY if you are replacing the white sugar with a liquid. For many children, this is the first 'real' recipe they make on their own.
Mix:
2 cups oats (not instant)
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
Add:
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla
Beat until smooth.
Add:
1 cup applesauce (fruit mashups work well in a pinch!) or about 3 large mashed bananas. Kids love to mash with a potato masher!
1 cup raisins if desired
Bake in an 8 inch square pan at 350 degrees for 35-40 minutes. This cake also makes great mini muffins; just lessen the cooking time by about 10 minutes.
